Jason Heiman- Executive Chef

Jason Heiman comes to us from Colorado , via Wisconsin . It was there that he caught the cooking bug. Starting as a short order cook in 1989 he worked his way through Denver’s bourgeoning restaurant scene. Jason attended the Colorado Art Institutes’ Culinary Program and upon graduating he flew off to Paris for “finishing school” at the Cordon Bleu. A relative newcomer to Chicago ( 2002) Jason was Sous Chef for Suzy Crofton, our neighbor, and at the eponymous Palm restaurants here and in Denver. When he is not at the restaurant he can be found pedaling his bike around town or watching movies and drinking wine with his wife Jennifer.
